Guncles didn’t come to life in a marketing meeting. It was born from a health crisis.
After relocating to San Francisco for work, John Edward experienced a terrifying series of anaphylactic episodes that eventually led to a rare diagnosis: Wheat Dependent Exercise Induced Anaphylaxis.
It meant a total life shift—especially for someone who grew up baking birthday cakes with his mom and grandmother.
The couple quickly realized that gluten-free options were bleak.
One disappointing cupcake from a grocery store left John Edward wondering how he’d survive without wheat.
But a chance encounter with a mom whose daughter had never had a birthday cake flipped the switch.
They knew they had to do more.
Back to Mobile With a Mission
They moved home. They baked. They tested. They reworked every recipe they loved growing up—without gluten.
From that labor of love came Guncles, now located on Government Street and stocked with family-inspired treats like bundt cakes, cheddar biscuits, and sweets that bring back childhood in one bite.
